Add testability to backoffice contribution form through phpunit

As a premilinary step towards refactoring the backoffice form to support a more payment processor agnostic process I am refactoring the back office such that the guts of the postProcess function lives in a function called submit which can be called for test. This is to enable changes to be made in a safe(r) way
