Payment and Profile Fields not populating - 4.1 B3 and Joomla 2.5.1

This is actually on Beta 3. I found basically the same thing in another Joomla 2.5 instance with 4.08 on the same server....I get a Contribution page on the frontend that's just email and Submit. The contribution page config doesn't seem to show the fields to select the payment processor, so I have to go into the db and do it manually. I'd like to confirm on the demo site, but there is no Joomla 2.5 on the demo site.

I don't see anything of substance on my Configuration Checklist, and have no warnings on screen, so am a bit stuck. I'm willing to troubleshoot further, though, if I can get some specifics to check.
