This turns out to be simply because they are excluded from the array of domain tokens

NB - it would be really helpful to most users if we added some tokens to receipts etc by default such as the existing

{domain.description} {domain.address} {domain.phone} {domain.email}

& the non-existing

{domain.logo} {domain.header}

Most receipt customisation is just to add the above elements
