Control "from" address when sending contact emails

When sending an email to a contact or search set, the "from" address is that of the person logged into the CMS. It would be nice to be able to override that either with a global setting or manually on the send email form. Organizations may have multiple staff accessing the CMS/CiviCRM, but want all sent emails to be sent from a single generic organization address.
