Contact BAO to set default Greeting & Addressee

Discussions with Lobo and Eileen lead me to believe that the contact BAO should be responsible for setting the default email/postal greeting and addressee. The defaults are populated on the core contact/add form, but we shouldn't assume that it will always be present in the BAO function's params, since it is also called from the API layer. I can supply a patch.
